Chocolate Topped Peanut Brittle
2 cups granulated sugar
1 cup light corn syrup
1/2 cup water
1/2 tsp salt
3 cups Royal Oak Peanuts Raw Virginia Peanuts with the skins on
2 tbsp butter
2 tsp baking soda
4 oz chocolate chips or chocolate bark
(1) Heat sugar, corn syrup, water and salt to a rolling boil in a heavy sauce pan.
(2) Add peanuts and reduce heat to medium and stir constantly.
(3) Cook to hard crack stage (293 degrees F)
(4) Add butter, then baking soda. Beat rapidly and pour onto a buttered surface spreading to 1/4 inch thickness.
(5) Melt the chocolate chips using a double boiler or on half power in the microwave.
(6) Pour the chocolate over the peanut brittle, spreading it with a spatula.
(7) When cool break into pieces and store in an airtight container.
Yields approximately 2 pounds.
