Peanut Parsley Pesto
This peanut pesto makes a great topping for grilled pork chops, a tasty topping for your bruschetta or toss it with your favorite pasta.
2 cups fresh parsley leaves
2/3 cup Royal Oak Peanuts Jumbo Salted Peanuts
2 crushed garlic cloves
2 tablespoons fresh lemon juice
1 tablespoon lemon peel
4 tablespoons extra virgin olive oil
1/3 cup grated parmesan or romano cheese
salt and pepper to taste
(1) Add the peanuts to a blender or food processor on maximum speed until crushed.
(2) Add the parsley, lemon peel, lemon juice, garlic and salt and pepper to taste. Blend until well combined.
(3) Change the speed to low and slowly add the olive oil.
(4) Add the cheese and blend until creamy.
